Stand aside hummus - today I celebrate the Italian white bean!
It's light, its creamy, it's seasoned with sumac + I also garnish with fennel seeds + thyme sprigs.
With the weekend fast approaching, this dip is it.
I make it sort of like hummus - just use Cannellini beans instead.
So, squeeze a lemon + add some sea salt, pour in a tin of beans + some of the juice, a garlic clove - pepper, lots of pepper! Wizzzzzz in the blender until nice + smooth (add some water to adjust consistency) Garnish with sumac (sumac is sour...so be careful here), fennel seeds + drizzle with olive oil.
